Home made pizzas - where you been all my life?

Got a breadmaker over Christmas and decided I'd try making pizza bases in them. Why did it take me so long to try. Pizza's turned out legendary.

I control the salt, fat, sugar and all content. So went for Light mozzarella, small amount of olive oil, chicken, lean meat sausages and my own tomato sauce consisting of chopped tomatoes, chillis, garlic, small splash white wine and a smidge of oil.

Fucking spot on. Bases crisped up brilliantly, if a little thick on the first one I tried. Nice and full up with fresh meat and ingredients.

I Lovesmilie making home made pizza's.
I even like (if I'm in a rush) using fresh french breadsticks from the bakery and throwing a load of loveliness on top and baking in the oven for something quick, healthy, scrumptious and different.
But, making the whole thing from scratch is a beaut.....

That's it, I'm having pizza tonight.

Cheapy Argos one. Just made sure I bought their 3 year replacement warranty for a few quid because it will go wrong Xyxthumbs

Even the odd loaf that doesn't rise well (lacking yeast probably) still works for toast. No preservatives in my sarnies today, freshly cooked gammon joint sliced as well.
I prefer sour cream and basil on the base instead of tomato pure.

It is huge.
I get pre rolled dough and do it like that.
A nice sauce with tinned tomatos, chilli, olive oil and garlic.
Then torn chicken with roquito peppers, chilli oil, sometimes some green pesto.
Always mozzarella chunks, melt nicely, sometimes with a strong cheese sprinkled on top.
Wilsh, bin the bread maker for pizza dough and do it by hand, You'll get a much better base that way.

400g strong white flour
100g fine semolina
1/2 teaspoon of salt

Mix together in a bowl.

1 teaspoon of sugar
7g dried yeast

Mix into 325ml warmish water. Bit warmer than luke warm but not hot at all.
Cover and leave for 5 minute til it gets frothy on top.

Mix about half of it into the dough and then add a glug (tablespoon or 2) of extra virgin olive oil and mix in well.
Mix in the rest of the liquid and put on a floured up surface and knead for 4-5 minutes until you can push your finger into it and have it spring back to how it was.

Put back in the bowl and leave covered with cling film for about 30 minutes.

It'll go to 2-3 times the size but needs bashing back down a bit.

It'll make either 3 thin bases about 12 inches or 2 deeper ones.
nom nom nomski....I wholeheartedly recommend doing it from scratch ala Benkei style...outrageous...

i'll leave the base up to you lot but as for topping:

sprinkle of olive oil
pasata
sliced tomatoes
garlic
mozarella
basil
and that's all- keep it simple Homerdrool

That's pretty much what I used. Just didn't bother with warm water.

My counter tops rock for making pizza to boot. Good thing I held a pizzeria
job as a teenager. It was an authentic Sicilian resto to boot (or would that
be Trattoria?). hehehe

Dont get me wrong, I would eat that the hell up, but there is too much topping.
Too many pizzas are ruined by too much topping, especially too much cheese.
They do half decent pizzas at Asda deli, most of the ingredients are crap but its cheap and better than fast take out shit, but the amount of toppings they put on is ridiculous, they assume everyone is a greedy fat shit.

I want a pizza, not some grotesque cheese pie.

That one actually does not have allot of cheese but indeed heavy on the toppings as it was made to mimic a "firenze" styled pie. Firenze Pizza was a joint in Sarnia where I used to live that made heavy ass pizza's which would fill you up on 1 slice basically. I will admit that I do prefer toppings over allot of dough to be honest. Unlike Firenze's I was not able to use allot of imported toppings as they do. I guess when you have a wait time of 2 hours to pick up your pizza a mere 10 minutes after you open you are making enough "dough" to warrant using imported pepperoni & sauces.
